It depends on weather you are discussing type of bike or ownership of the bike.
I shows ownership or possession of the bike. One girl with a bike which was stolen. The word girls' would mean several girls owned the bike. Not correct here.

One girl had her bicycle stolen.
one girl's bicycle was stolen: meaning that some girl had her bicycle stolen by someone. That should be the correct answer.
The 'one' in the sentence may be to show a single girl or bicycle. In this case they have different answers.
If the word "one" is reffered to girl- who is the owner of the stolen bicycle, then the 2th answer is correct. But if the word "one" reffers to bicycle which it,s used by girls, then the 3th answer is correct

I would choose the second option in a multiple choice question but as pointed out, option 3 could also be correct.

These sentences seems easy but can be very complex. One thing I know is; the 's indicates ownership for words that do not end with s while words that end with s follow the sign ' as for that words with just s for me are pural. so, whats the right answer?

I go for the 2nd answer because this is crrect accroding the grammer which i learnt.
there are 3 types of example and the problem is, they all have letter "s", it means many girls but its not indicate who is the girl own the bicycle, that's why they use " GIRL's " because there's no indication that whom girl was stolen, thats why i go for number 2... final answer
