Google Contacts + NuevaSync and iTunes + Time Machine backup.
If your contacts are on your phone, your desktop computer and on the web, it must be pretty safe. Unless a deletion syncs a contact out of your ecosystem.
iTunes + Exchange + Google + SugarSync (similar to MobileMe but syncs multiple computers and cloud). Can you tell I've been burned in the past?)
